This is a fun, kid-approved recipe utilizing a delicious but less commonly used vegetable. Kohlrabi is a a relative of cabbage, broccoli, cauliflower, kale, collard greens, and brussels sprouts…and carries a similar nutritional powerhouse profile. Ingredients:
- 2 kohlrabis
- 2 carrots
- 1 apple
- balsamic vinegar
- honey
Steps:
1. Grate everything (easiest in a food processor but can use grater or mandolin).
2. Sprinkle with a little balsamic vinegar and honey, to taste.
