One of the most intimidating things about going paleo is that there is an underlying assumption that everyone knows how to cook at least some stuff.  And when going paleo means that you’re most likely giving up some of your packaged/chemically-laden convenience foods, it can be hard to know where to start.

That’s why I created this series: Paleo for Cooking Newbies!  In pretty much no time at all, you could be whipping together this ground beef with the taco mix I share below and using it as a topping for some baked sweet potatoes or bone broth rice.  Throw some veggies and/or guacamole on top, and you’ve got yourself a pretty filling and nutrient rich meal!  Rest assured, once you get a couple good recipes under your belt, all the others come a lot easier.

Ingredients:

  • 1 lb ground beef (you might consider trying to find grass fed beef, if your budget allows)
  • 1/4 large onion or 1/2 small onion, cut up into little pieces
  • 1 tablespoon butter (or any other heat-stable fat such as ghee or red palm oil)
  • 1/3 teaspoon salt
  • 1/8 teaspoon ground pepper

Steps:

1. Get all of your ingredients ready on the counter top…once you get cooking, the whole process doesn’t take too long so you don’t want to be rushing.

2. Place a medium-sized skillet on your stove and turn the burner on to medium heat.

3. Put your 1 tablespoon of butter in the skillet and wait for it to melt.

4. Add in your onions and cook them for 2-3 minutes, or until they’ve started to go soft.

5. Add your ground beef into the skillet.

6. Using a spatula, chunk up the ground beef so that it looks like this:

7. Add in your salt and pepper and stir.

8.  Keep stirring until you don’t see any pink ground beef.

9.  Cook for 3-5 more minutes (it depends on how you prefer your ground beef…just experiment with this step until you’ve found what you like).

10. Remove from heat and serve.

Bonus Taco Seasoning Mixture!

In the instructions above, I just did the basic salt-and-pepper recipe.  But in reality, you can pretty much add any spices you want…like this taco seasoning!

Ingredients:

  • 1 teaspoon granulated onion
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1-2 teaspoons chili powder (use the higher amount if you like spicy food)
  • 1/4 teaspoon crushed red pepper flakes (you can add more if you like spicy food)
  • dash of cayenne pepper if you prefer spicier taco mixes

Steps:

1. Combine all ingredients in a small bowl.

2. Use this mixture in Step #7 in the instructions above (at the same time you add salt and pepper).

You can triple or quadruple this recipe and keep it in a small jar if you’d like to have some on hand so busy nights!
